Fiordilatte – julienne cut  

Fior di latte is the preferred choice of today’s Pizzaioli to make the authentic Pizza Napoletana due to its creaminess and distinctive taste. This particular Julienne cut “Taglio Napoli” is 1cm wide and 6cm long so much thicker than a standard julienne, this allows more moist to be retained and prevent it from burning when cooked in high temperature ovens, i.e. Wood fired ovens.  julienne cut
