It all began in 1956 when Euride Zini, Emilian DOC, founded a small pasta factory in the heart of Milan, which still bears his name, producing fresh pasta which was eaten immediately or frozen. Today Zini carries on this tradition, respecting the recipes of the past and refusing to use non-natural ingredients such as dyes and additives. For the preservation of its products occurs to a single natural element: the cold.
